Juicy Baked Chicken.. Makeover


Basil Lime Chicken

I did an earlier post on how to achieve Juicy Baked Chicken, and it was such a hit!  However, Juicy Baked Chicken is back, but with a makeover that will make your taste buds dance! This time, juicy baked chicken is still not only simple but with even more flavor that will make anyone think you’ve really marinated this for hours.  Try out Basil Lime Chicken and tell me if you enjoyed it more than the original!

Basil Lime Chicken


  • Boneless, skinless chicken breast
  • 4 tablespoons Dijon mustard
  • 2 tablespoons Lime juice
  • 1 Garlic clove, minced
  • 1/8 Red onion, diced
  • 2 teaspoons Dried basil leaves
  • S&P to taste


  • Combine all the ingredients in a bowl, except the chicken
  • Place chicken in a baking dish, and cover chicken in sauce mixture
  • Bake uncovered at 375 degrees for 30 minutes, or until chicken is done

Juicy Baked Chicken Breast? It’s Possible!

Yogurt Chicken

I came across a recipe that advertised how delicious and juicy this baked chicken breast was.  My first thought was, ‘how my pounds of butter is in this recipe?’  But it wasn’t butter that made it tender, it was a ton of mayonnaise! I was a bit sickened at the thought of how much mayo that was used in the recipe only because 1) I’m not a fan of mayo to begin with and 2) it sounded disgusting.  However, I could completely understand the reasoning of how the chicken was kept moist.  I decided to do my own version of it, and it turned out amazing!  I used Greek yogurt, and as it bakes on the chicken, the yogurt dries out, making it similar to a ricotta cheese texture.  I’m a fan!

Juicy Baked Chicken


  • 1 cup Greek yogurt
  • 3 tablespoons Dijon mustard
  • 2 teaspoons Garlic powder
  • 2 teaspoons Onion powder
  • 2 teaspoons Italian seasoning
  • 1 teaspoon Oregano
  • 1 teaspoon Red pepper flakes
  • A couple grinds of Black pepper
  • 2 Skinless chicken breasts


  • Take the first 8 ingredients and mix together
  • Slather chicken with the mixture and place in baking dish
  • Bake for 25 mins at 425 degrees
  • Broil for 5 mins

No Salt… No Problem!

Sauteed Chicken

Lately, I’ve been trying to incorporate salt-free seasoning as much as possible.  At first, I was opposed because.. well.. salt is used to enhance flavors!  But after purchasing a Costco-sized organic salt-free seasoning, I figured I better start using it as much as possible!

This dish is something that I make often during the weekdays, as I always keep these ingredients on hand and it is super quick for a healthy meal.  If you’ve never used salt-free seasoning, this is a great recipe to try out as it’s flavorful and delicious!

Sauteed Chicken & Veggies


  • 2 Chicken breasts, cut into cubes
  • 1 handful Cherry tomatoes, halved
  • 2 handfuls Fresh spinach
  • 1 clove Garlic, minced
  • 2 teaspoons Salt-free seasoning
  • Cooking spray, or olive oil
  • 1 teaspoon Lemon juice
  • Cracked black pepper, to taste


  • Season the chicken breasts with salt-free seasoning, and cracked black pepper
  • Lightly coat pan with cooking spray or olive oil, add minced garlic
  • Add chicken to pan and saute, about 5 mins.  Remove chicken and set aside
  • In the same pan, add cherry tomatoes and spinach, about 5 mins
  • Add chicken back into pan, add lemon juice, 3 mins
